Chicken X 2

Who doesn’t enjoy a tasty yard nU bird?! I for one do! My favorite part of a chicken, is the thighs. I think breast meat is way overrated! I have enjoyed two delicious chicken dinners the past couple of nights. The recipes are as follows:

Asparagus Chicken Bake

Preheat oven to broil

3T butter
1/3c olive oil
6 cloves of garlic, chopped well
Zest of 1 lemon
6 anchovie fillets
2, 14oz cans of quartered artichoke hearts, well drained
2 pounds of chicken, cut into pieces

In a large skillet, heat oil and butter over med-high heat. Add anchovies and use a wooden spoon to mash them until they’re mostly dissolved. Remove pan from heat, add garlic and lemon zest, stir well. In a large glass baking dish, add chicken and artichokes. Pour butter sauce on top and use tongs to thoroughly coat chicken and artichokes. Place under broiler, stirring frequently, until chicken is cooked, artichokes will begin to brown on edges. Remove from oven, enjoy!

That dish was so delicious! I was hesitant about the anchovies. I’ve NEVER cooked with them before, but, wow, the flavors could not have been tastier!

The next night, I made my own chicken salad concoction. My kids have been sick, I was feeling pretty tired, so I bought a rotisserie chicken….probably NOT free-range, but….in a pinch….

Chicken Salad

Roughly 2-3 cups of shredded chicken
2 ripe avacados, pitted, peelef, chopped
1/2 med yellow onion, chopped
Juice of 1 lemon
Salt and pepper to taste

Place all ingredients in food processor, pulse til well blended. Serve on romaine leaves!


Not too bad for a quicky supper!

Tonight, I tried to re-create a pasta dish I LOVE, by replacing the pasta with spaghetti squash. Well lets just say tonight was a culinary FAIL! Numero uno: canned asparagus is nasty and should be illegal. Truly, it ruined the entire meal, but “want not, waste not”, we begrudgingly ate it anyway. Next time, I avoid shortcuts, lessons learned. Here is the real recipe:

Lemony Asparagus and Shrimp “Pasta”

2T butter
2T olive oil
1 bunch of FRESH asparagus, tough ends removed
1/4c chicken stock
Juice of 1 lemon
6 cloves of garlic chopped.
1 pound of shrimp
1 spaghetti squash

Bake/microwave your spsghetti squash, remove seeds, scrape the “meat” out with a fork.
Set aside.
Melt butter in oil, in a large frying pan over med heat. Add all ingredients but shrimp and squash, bring to a simmer, and cover. Let asparagus cook until tender-crisp. Remove lid, let sauce reduce until its slightly thickened, then toss in shrimp. Remove from heat as soon as shrimp is done. Toss with spaghetti squash, salt and pepper to taste!!

Hold on bandwagon, wait for me!!

Soooo, this weekend, I incorporated a couple of not so paleo things into my diet. First, friday night I wanted pizza in a baaaaaad way! So, I found a recipe for the infamous cauliflower pizza crust that had a bit of cheese in it…so of course I added cheese to my pizza as well. It was DELICIOUS, a taste spectacular even! I think I actually prefer it over its doughy counterpart! Well the next morning, I had leftover ,prepared, crust ingredients, so I made a breakfast pizza, which was also fantabulous!!!


Now, I know there is a lot of debate about whether cheese is paleo or not, but in my opinion, paleo or not, its definitely one of those things that I have portion control issues with…..i really heart cheese….. So, I will allow transgressions such as these here and there but cheese cannot be a regular feature in my diet.

My real sin came saturday (there’s that waterfall effect I was talking about). I went to a friends house, who happens to be a world famous baker (well, not really, but she should be…and lucky me, I actually have two friends who fall in this category). Anywho, she had made a really yummy, gluten-free, vanilla, cake with REAL ,homemade, buttercream frosting, that I literally just wanted to bathe in (don’t you judge me!). So I had…some.

I am not riddled with guilt over my decisions. I enjoyed them at time of consumption, and I will enjoy them again one day. But today, I am back in action. And I’m happy about it. I really love eating paleo and I love how eating paleo make me feel.

And just for giggles, im totally giving you the pizza recipe, just in case you are a cheese-eating paleo-er.

Cauliflower Pizza Crust

Pre-heat oven to 425 degrees

1c steamed, riced, cauliflower
1c. Shredded (not grated) parmesean
1 egg
1/2 tbsp each of garlic powder, basil, and oregano

Mix all ingredients well. Grease a baking sheet with coconut oil. Spread crust mix out fairly thin on to baking sheet. Then bake for about 25 minutes or until golden brown all over. Pull it out and let it cool down while u prep toppings.

Once you add your toppings, place pizza under broiler just until toppings are brown, and or cheese has melted!

For my breakfast pizza I chopped up a fried egg, and 2 slices of bacon. I used pesto as my base, and topped it with cheddar.

Eggs, and artichokes, and beef, OH MY!

So im back to inventing my very own paleo meals!


Mmmm, want some?! ( I know my food pics still aren’t very appealing, but hang in there, they’ll get better!)

So the yellow stuff is a frittata, kind of. Im calling it:

Italian Beefy Bake

Pre heat oven @ 375

2 Tbsp lard or coconut oil
1 small yellow onion, chopped fine
2c. Fresh Spinach
1lb ground beef
1Tbsp garlic powder
1 Tbsp dried Basil
1tsp sea salt
1 can salt free organic tomatoes, drained and rinsed
1 small jar marinated artichoke hearts, drained and well rinsed
8 eggs, beat well
1/4c. Coconut milk (the yummy thick kind, not the weird drink in a carton)

Heat the oil in a large frying pan over med-high heat. Sautee onion til tender, add spinach and sautee til wilted, add ground beef, garlic powder, and basil. Cook til beef is done, add tomatoes and artichoke hearts, and salt. Cook stirring frequently until excess liquid is cooked off.
Use coconut oil to grease an 11×13 glass baking dish. Pour beef mixture in and spread it evenly.
In a large bowl mix beaten eggs with the coconut milk, mix well.
Pour egg mixture over beef mixture, top with fresh ground black pepper.
Bake in oven for about 30 min until egg is thoroughly cooked and casserole is set in the center.

Its seriously yummy.

The green stuff, I made mostly for the kids….mostly. I took 2 bags of fresh, pre-chopped,organic, broccoli/cauliflower/carrot mix, I found in the produce section. I steamed the veg, tossed it all in a food processor, added 3Tbsp organic butter, and 1/4c coconut milk, and pureed it into a thick, creamy, veggie wonderland that my kids gobbled up like candy….i may have too, it was really good!

Week 3 Day 3

Its been a rough week, im not going to lie! My energy level has been low, ive been cranky, and craving carbs BAD! However, I want you all to know that this week i’ve dug my heels in, and have resisted every urge. From the christmas cookies in the office, to the tasty looking treats at the hospital christmas party. And I can honestly say this is the FIRST TIME that I have not rationalized why it’s ok for me to “cheat” or “treat myself”. I think im finally understanding that treats,and cheats actually just screw me up and generally lead to a unhealthy eating STORM!

I’ve been consistently exercising, which is good and i’ve been drinking my water!

So, technically, im actually doing really well this week….and im hoping if I can keep on pushing on, my new eating habits will be as easy as breathing!

Did I mention im down a total of 13 pounds now?! WHAT SAY WHAT!!!!

Working through it…

Today is Day 1 of week three. My scales are broken so im taking that as a sign to leave them alone. I can get a little focused on scale numbers and ….its just no good for me. Today was kind of tough; I was having carb cravings like whoa and why? Because today was an emotional day and I wanted to self-medicate with carby goodness. Which is totally irrational but totally true. Plus I failed to pre-plan for lunch so I had to think on my toes, but I chose wisely despite my inner voice screaming, “Just get some chicken tenders and french fries!!” I told that hateful beast to shut up and I got some damn salad and grilled chicken!

The toughest part is remembering that results are slow and require effort! Lots of effort…Rome wasn’t built in a day and what not. AND I am trying to reverse a LIFETIME of unhealthy eating. But still, it would be nice to look like my hero Sarah Fragoso overnight! Just saying.

Speaking of whom….i made yet another Sarah F. dish tonight and it was….delicious of course! I took a pic but it turned out less than visually appealing. Anyway it’s called Meaty Pumpkin Souffle. This was my first souffle attempt and, well, it was a FAIL! It didn’t rise like it should have but it was still really tasty!

I slacked on my water intake today, but I walked for an hour and a half yesterday, and that felt really good. Tomorrow is a new day! My goals: more water, more movement!

Sweet Dreams all!

Act like an 8 year old!

Because 8 year olds act like lunatics when they play and no doubt burn up some serious calories too.  Yesterday, in pursuit of my creative exercise endeavor, I challenged myself to participate equally in all games my children played. My youngest, H., is 6, E. is 8, and the oldest, R., just turned 9. These kids really know how to play too and they kicked my ass in shape! First, we relay raced. The first race, we had to bear walk, the second race, we crab crawled (E. is incredibly fast at this one, its very strange and somewhat awkward to watch, but incredibly entertaining), the third race we kangaroo hopped! And I didnt win, not once. Apparently cheating is among my childrens’ set of skills! R. then taught us how to play “Toilet Tag” which is an amazing game she and her friend invented during recess one day. Toilet Tag is similar to regular tag in that one player chases all the others in an attempt to tag them, what sets toilet tag apart is that when a player is tagged, they must kneel on one knee and stick one arm straight out to the side, and then the tagger, sits on the tagee’s knee and push their arm down whilst making a loud FLUSH sound……..did I mention R. is a very odd child?! But she’s cute so we keep her. Anywho, so I played toilet tag and somehow, no matter who I tagged, I continued to be the tagger. Soooo, I ran, A LOT! We then played red rover, had a dance-off, and pretended to be ducks. Today, I am sore in places I didnt know I could be sore. I also realized how long its been since I got such quality interaction with my kids, and thats shameful. My future is gauranteed to have many more play dates to come!

On another note, my appetite is diminishing! Yesterday morning I had two eggs, three pieces of bacon, and some purple cabbage sauteed in coconut oil. I was not even remotely hungry until around 8pm last night! Pretty cool huh?

“This is how we do it..”

This morning, I exercised. Being a child of the mid-late 80’s and early 90’s, I decided to mix up my morning walk to make it more exciting. I drew inspiration from Baby, in Dirty Dancing, and started out with a little walk-dancing:


Then inspired by Kevin Bacon, starring as Ren, in Footloose, I punched it out!


Nothing like a good punch-dance to let it all out! I didn’t have a beer or a cigarette though, but that’s probably for the best.

I further mixed up my routine by spontaneous outburts of doing the “roger rabbit” to Montell Jordans hit, “This is how we do it” & thought to myself, “self, he’s right, THIS IS HOW WE DO IT!” I also incorporated 6, short but fiesty, uphill sprints, and 2 sets each of 10 incline push-ups and squats. In the end, I was breathless, sweaty, had listened to everything fron TLC, to Dave Matthews and Alanis Morrisette, and my legs were shakey. Must’ve done something right……?

I then proceeded to get cleaned up for work and made the most delicious smoothie known to man! I shall give you the recipe!!

Most Amazing Smoothie Known to Man, Smoothie (MASKTMS)

Serves, 1

1/2c frozen berries (i used straw and blue)
1/4 can of coconut milk
1/4c water…roughly
1 scoop strawberry whey isolate
Some ice

Blend well in a bullet or blender, drink, enjoy, wipe smoothie mustache off face prior to entering in to the public eye….or don’t.

This smoothie kept me going for a solid 6 hours! Not bad. Next time, I may even add spinach!

Lunch was leftover Butter Chicken and steamed kale, and supper will be wild rabbit that the hubby killed yesterday! How’s that for Paleo?! Im kinda hardcore like that….and I live in the woods….
